  • 1 tbsp Extra Virgin Olive Oil
  • 2 Cloves Garlic (Minced)
  • Pinch of Salt
  • Pinch of Pepper
  • 5 cups romaine lettuce (chopped)
  • ½ Cup Green Pepper (Chopped)
  • ½ cup Red Onion (Chopped)
  • 1 cup Roma Tomatoes
  • ½ cup Cucumber (sliced)
  • ¼ cup Feta Cheese
  • ¼ Kalamata Olives

  1. Heat the oil in a medium skillet over medium-high heat until shimmering.
  2. Add garlic cloves and until they start to brown.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Cook, turning once, until firm to the touch, about 5 minutes per side.
  5. Remove from heat and set aside.
  6. Place lettuce, pepper, olives, onion, cucumber, and cheese in a bowl.
  7. Toss with GREEK DRESSING (if serving immediately)
  8. Top with sliced chicken and enjoy!
